Debone a Chicken - Chef's Trade Secrets

Never boned a bird? Though the task may seem daunting, it's quite quick once you get the hang of it. Be careful not to prick the skin or the bird's juices will dribble out during the cooking, resulting in drier meat. Once the chicken is de-boned, opened butterfly, and flattened, it can be rolled or stuffed in a variety of ways.
