Ingredients
- 250g (6 sausages) Quorn Cumberland sausages
- 1 red onion, sliced
- 2 sprigs fresh thyme
- 1 tsp wholegrain mustard
- 2 tbsps red wine
- 1 x 400g can chopped tomatoes
- salt and black pepper
- FOR THE CHEESY MASH
- 600g potatoes, peeled and cut in half
- 1 large onion, peeled and quartered
- 100g Rosemary Conley's Less Than 5% Fat Mature Cheese, or vegetarian alternative, grated
- 1 tbsp finely chopped chives
Cooking Instructions
- Preheat a non-stick frying pan until hot and dry-fry the sausages until lightly browned. Add the red onion and continue cooking until soft.
- Stir in the remaining ingredients and bring to a gentle simmer for 10 minutes until the sausages are cooked through.
- Boil the potatoes with the onion in a pan of water until soft. Drain well and mash, adding the grated cheese and chives. Adjust the seasoning and serve with the sausages and sauce.
Tips
To save time, you can serve the sausage "stew" with some crusty bread.
