Tofu Humous Kebabs

Tofu houmous kebabs

Ingredients

  • 250g tofu
  • 1 red pepper, deseeded and diced
  • 8 cherry tomatoes
  • 1 x 400g can chickpeas, drained
  • 1 garlic clove, crushed
  • 150ml vegetable stock
  • juice of ½ lemon
  • 1 tbsp chopped fresh coriander
  • salt and freshly ground black pepper
  • sweet chilli sauce, to serve

Cooking Instructions

  1. Preheat the grill or a barbecue.
  2. Drain the tofu on kitchen paper and cut into bite-sized pieces.
  3. Take 4 wooden or metal skewers and thread the tofu, red pepper and tomatoes alternately on to each skewer, then place on a non-stick baking tray.
  4. Place the chickpeas in a food processor with the garlic and blend until smooth, adding the lemon juice and vegetable stock gradually until a thin paste is formed (you can add more stock if required).
  5. Season the paste with salt and black pepper, stir in the chopped coriander and then drizzle the paste over the tofu, coating all sides.
  6. Cook the kebabs under the grill or on the barbecue for 8-10 minutes each side.
  7. Serve the kebabs with sweet chilli sauce plus 1 x 200g baked sweet potato per person and a mixed salad.

Tips

This paste makes a great dip or sandwich filler.
