Ingredients

  • 4 large field mushrooms
  • 200g fresh spinach
  • 250g tofu, drained and diced
  • 1 tbsp Kikkoman soy sauce
  • 1 tbsp chopped fresh mixed herbs (eg parsley, chives)
  • salt and freshly ground black pepper

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Wipe the mushrooms, using a damp piece of kitchen paper, then place in a roasting tray, face side down, and bake in the oven for 10 minutes.
  3. Wash the spinach well and place in a large saucepan containing a little water. Stand it over a low heat and leave it to wilt.
  4. Preheat a non-stick pan and spray lightly with oil spray. Add the tofu and brown on all sides, seasoning with salt and black pepper, then add the soy sauce and remove from the heat.
  5. Drain the spinach well. Remove the mushrooms from the oven. Turn the mushrooms over and place the spinach on top, spoon the tofu over and sprinkle with the herbs.
  6. Serve hot with vegetables or salad and sweet chilli sauce.

Tips

For a meat alternative, use thin strips of chicken instead of tofu - and cook them in a health grill.
