Sweet potato and red pepper soup

Ingredients
- 1 red onion, sliced
- 1 tsp paprika
- 1 garlic clove, crushed
- 1 red pepper, deseeded and diced
- pinch of dried chilli flakes
- 300ml vegetable stock
- 400g can chopped tomatoes
- 100g sweet potatoes, peeled and chopped
- 1 tbsp chopped fresh chives
- salt and freshly ground black pepper
Cooking Instructions
- Preheat a large non-stick pan and dry-fry the onion, paprika and garlic for 2-3 minutes. Add the red pepper and chilli flakes and stir in the vegetable stock and tomatoes.
- Bring to the boil, then reduce the heat to a gentle simmer. Add the potatoes and simmer until cooked. Adjust the seasoning and garnish with chopped chives on serving.
Tips
The sweet potatoes thicken this spicy soup. For a smoother version, whizz in a liquidiser ir blender.
