Ingredients

  • 1 red onion, sliced
  • 1 tsp paprika
  • 1 garlic clove, crushed
  • 1 red pepper, deseeded and diced
  • pinch of dried chilli flakes
  • 300ml vegetable stock
  • 400g can chopped tomatoes
  • 100g sweet potatoes, peeled and chopped
  • 1 tbsp chopped fresh chives
  • salt and freshly ground black pepper

Cooking Instructions

  1. Preheat a large non-stick pan and dry-fry the onion, paprika and garlic for 2-3 minutes. Add the red pepper and chilli flakes and stir in the vegetable stock and tomatoes.
  2. Bring to the boil, then reduce the heat to a gentle simmer. Add the potatoes and simmer until cooked. Adjust the seasoning and garnish with chopped chives on serving.

Tips

The sweet potatoes thicken this spicy soup. For a smoother version, whizz in a liquidiser ir blender.
