Sweet Potato and Cheese Soda Bread

This moist, fluffy soda bread is light, crusty and low in fat. The sweet potato gives it a lovely orange colour and the cheese and herbs are an extra special taste touch. No need for kneading, yeast or fancy techniques - just chuck it all in a bowl and throw it in the oven. This healthy recipe would give a Greggs loaf a run for their money any day! 267 calories and 1.4% fat.

Sweet potato and cheese soda bread

Ingredients

  • 500g strong white bread flour
  • 3 tsps baking powder
  • 1 tsp salt
  • 200g mashed cooked sweet potato
  • 300ml semi-skimmed milk
  • 50g grated low-fat cheese
  • 1 tbsp freshly chopped chives

Cooking Instructions

  1. Warm 500g strong white bread flour in a bowl adding 3 tsps baking powder and 1 tsp salt.
  2. Mix 200g mashed cooked sweet potato with 300ml semi-skimmed milk and add to the flour mixing well with a knife.
  3. Add 50g grated low-fat cheese and 1 tbsp freshly chopped chives.
  4. Mould together into a ball and place on a baking tray.
  5. Cut a cross in the top with a sharp knife and bake in a preheated oven for 35-40 minutes at 200c 400f Gas mark 6.
  6. Test when cooked by turning the loaf over and tapping the base. It should sound hollow.

Thanks guys ..... I never do anything sublty nor think before I type ........
shall definatley be making this again as it was superb ( I added some chopped chillis as well which gave it a kick). Do you think it would work well with other veg such as butternut squash?

Hi Pollyann, thanks for pointing out our mistake in such a SUBTLE way. We're amending the recipe now. It should be cooked at 200c, 400f or gas mark 6

I made this last night and it smells/tastes delish.....although it is slightly heavy BUT that could be because I cooked at the wrong temperature.BECAUSE you dont specify what temp it should be cooked at !!!!

Looks absolutely great! I may try it sometime but using Dove Farm gluten free flour!
