Stir-fried vegetable noodles

Ingredients
- 100g rice noodles
- 2 leeks, finely sliced
- 1 garlic clove, crushed
- 1 yellow pepper, deseeded and sliced
- 2 courgettes, sliced
- 100g chestnut mushrooms, sliced
- 1 tbsp Teriyaki sauce
- 1 tsp rice vinegar
- 300g fresh beansprouts
- squeeze of fresh lime juice
- freshly ground black pepper
Cooking Instructions
- Cook the rice noodles in boiling water, then drain.
- Heat a non-stick wok and stir-fry the leeks and garlic over a high heat for 3-4 minutes, seasoning well with black pepper. Add the yellow pepper, courgettes and mushrooms and continue cooking for 1-2 minutes.
- Stir in the remaining ingredients, along with the cooked noodles, and toss well together.
- Serve straight away with a mixed salad tossed in fat-free dressing.
