Stir-Fried Rice Noodles

Ingredients

  • 30g rice noodles
  • 2 baby leeks, finely sliced 200g
  • ½ garlic clove, crushed
  • ½ yellow pepper, deseeded and sliced
  • 2 baby courgettes, sliced
  • 50g chestnut mushrooms, sliced
  • 2 tsps soy sauce
  • 1 tsp rice vinegar
  • squeeze of fresh lemon juice
  • freshly ground black pepper

Cooking Instructions

  1. Cook the rice noodles in boiling water and drain.
  2. Preheat a non-stick wok, then add the leeks and garlic and dry-fry over a high heat for 3-4 minutes, seasoning well with black pepper. Add the yellow pepper, courgettes and mushrooms and continue cooking for 1-2 minutes.
  3. Stir in the cooked noodles along with the remaining ingredients and toss well together. Serve straight away.
