Ingredients
- 30g rice noodles
- 2 baby leeks, finely sliced 200g
- ½ garlic clove, crushed
- ½ yellow pepper, deseeded and sliced
- 2 baby courgettes, sliced
- 50g chestnut mushrooms, sliced
- 2 tsps soy sauce
- 1 tsp rice vinegar
- squeeze of fresh lemon juice
- freshly ground black pepper
Cooking Instructions
- Cook the rice noodles in boiling water and drain.
- Preheat a non-stick wok, then add the leeks and garlic and dry-fry over a high heat for 3-4 minutes, seasoning well with black pepper. Add the yellow pepper, courgettes and mushrooms and continue cooking for 1-2 minutes.
- Stir in the cooked noodles along with the remaining ingredients and toss well together. Serve straight away.
