Spicy vegetable couscous salad

Ingredients

  • 100g couscous
  • 1 tsp vegetable stock powder
  • 250ml boiling water, from a ketlle
  • 2 spring onions, chopped
  • 1 red pepper, deseeded and diced
  • 1 small red chilli, chopped
  • 2 tomatoes, diced
  • ½ cucumber, finely diced
  • lemon juice to taste
  • freshly ground black pepper
  • fresh basil leaves to garnish

Cooking Instructions

  1. Put the couscous in a mixing bowl and add the stock powder and boiling water. Mix well, then cover with clingfilm and leave for 1 minute until the water has been absorbed.
  2. Heat a non-stick pan, add the spring onions, red pepper and chilli and dry-fry until lightly coloured, seasoning with black pepper.
  3. Remove the pan from the heat and spoon into a mixing bowl. Add the couscous, tomatoes and cucumber and mix well. Season with salt and black pepper and a little lemon juice.
  4. Pile into a serving dish and serve either warm or cold garnished with fresh basil leaves.
