Spicy okra and kidney beans

Ingredients

  • 2 red onions, chopped
  • 2 garlic cloves, crushed
  • 200g okra, chopped
  • 1 red pepper, deseeded and diced
  • 1 x 400g can chopped tomatoes
  • 2 tsps chopped thyme
  • 1-2 tsps vegetable stock powder
  • 1 x 400g can kidney beans, drained
  • 1 tbsp lime pickle
  • 2 bay leaves

Cooking Instructions

  1. Preheat a non-stick frying pan and dry-fry the onion and garlic until soft. Add the okra and red pepper to soften.
  2. Stir in the tomatoes, thyme and stock powder. Add the kidney beans, pickle and bay leaves and allow to simmer for 20 minutes. Serve as a vegetable accompaniment or as a main dish with rice.

Tips

Okra or ladies fingers are a small green vegetable, if unavailable substitute with baby courgettes.
