Ingredients

  • 4 large red plums
  • 1 red portion pot/250ml red wine
  • 1 tbsp muscovado sugar
  • 1 tsp allspice berries
  • 1 star anise

Cooking Instructions

  1. Cut the plums in half and remove the centre stones.
  2. Place the plums in a saucepan with the remaining ingredients and simmer for 10 minutes until the fruit is soft.
  3. Once soft, remove from the pan and continue to reduce the cooking liquor until it's the consistency of a light syrup.
  4. Arrange on plates and serve either warm or cold with low-fat yogurt.

Tips

This pudding will keep up to 5 dyas in the refrigerator
