Ingredients
- ½ red onion, sliced
- 6 chestnut mushrooms
- 1 tbsp soy sauce
- 2 eggs
- 1 tbsp semi-skimmed milk
- 1 tbsp chopped fresh coriander
- Freshly ground black pepper
Cooking Instructions
- In a preheated non-stick frying pan dry-fry ½ a sliced red onion with 6 chestnut mushrooms for 1-2 minutes, then stir in 1 tbsp soy sauce to deglaze the pan.
- In a clean bowl, beat 2 eggs with 1 tbsp of semi-skimmed milk, then add to the frying pan and season with freshly ground black pepper. Cook the eggs gently, using a wooden spatula to bring the set mixture from around the edges of the pan into the centre.
- When the omelette is almost completely set, add 1 tbsp chopped fresh coriander, then turn the omelette over-either whole, or split it down the centre to make it easier to turn.
- Serve immediately with a salad tossed in oil-free dressing.
