Ingredients
- 1 large aubergine
- 2 cloves garlic, chopped
- 1 tsp smoked paprika
- 1 tbsp soy sauce
- 1 tbsp barbecue sauce
- juice of 1 lime
- fresh corinader, to serve
Cooking Instructions
- Preheat a barbecue or grill. Cut the aubergine into quarters lengthways and place in a shallow dish. Make additional cuts across the top of each quarter to allow the marinade to penetrate the flesh.
- Mix together the marinade and pour over the quarters. Allow to marinade for a minimum of 30 minutes. Cook over a hot barbecue or under a hot grill for 20 minutes until soft.
- Just before serving sprinkle with freshly chopped coriander.
Tips
For a meaty option add thin slices of ham into the cuts of the aubergine before cooking.
