Ingredients
- 50g (dry weight) pasta shells
- pinch of vegetable stock powder
- 2 spring onions, finely chopped
- 1 red pepper, deseeded and chopped
- 125g tomato passata
- a few fresh basil leaves, shredded
- salt to taste and freshly ground black pepper
Cooking Instructions
- Cook the pasta in a large pan of boiling water.
- Place the spring onions and red pepper in a saucepan with the stock powder, cover with boiling water and simmer for 5 minutes.
- Remove the mixture from the heat and stir in the passata and basil leaves. Transfer to a liquidiser and liquidise until smooth, then return to the pan to heat through. Season with salt and black pepper to taste.
- Drain the pasta and arrange on a serving plate. Pour over the pepper pesto, garnish with basil and serve with a mixed salad.
