Potato and Spinach Salad

A lovely side salad perfect for summer. Using low fat mayonnaise in this recipe keeps the fat and calories a lot lower than traditional potato salad. And adding spinach means the nutritional content is sky high. 74 calories per portion.

Ingredients

  • 300g new potatoes, boiled
  • 1 vegetabel stock cube
  • 200g fresh spinach, chopped
  • 1 tbsp lemon juice
  • 2 tbsp Low-fat Mayonnaise

Cooking Instructions

  1. Cook 300g new potatoes in a pan of boiling water with a vegetable stock cube.
  2. Drain the potatoes, then mix in 200g chopped fresh spinach and allow to cool.
  3. Mix together 1 tbsp of lemon juice and 2 tbsps of Low-fat Mayonnaise.
  4. Add to the potatoes, mix well and season to taste.
  5. Pile into a serving bowl and serve as a side dish.
