Ingredients
- 300g new potatoes, boiled
- 1 vegetabel stock cube
- 200g fresh spinach, chopped
- 1 tbsp lemon juice
- 2 tbsp Low-fat Mayonnaise
Cooking Instructions
- Cook 300g new potatoes in a pan of boiling water with a vegetable stock cube.
- Drain the potatoes, then mix in 200g chopped fresh spinach and allow to cool.
- Mix together 1 tbsp of lemon juice and 2 tbsps of Low-fat Mayonnaise.
- Add to the potatoes, mix well and season to taste.
- Pile into a serving bowl and serve as a side dish.
