Pineapple and cherry kebabs

Ingredients
- 1 medium ripe pineapple
- 16 whole cherries
- fresh nutmeg
- 1 lime
- 2 tbsps maple syrup
- pomegranate seeds, to decorate
Cooking Instructions
- Preheat the grill to high.
- With a serrated knife, cut off the top and bottom of the pineapple. Stand the pineapple upright and cut downwards and around to remove the skin. Cut the fruit into quarters and then cut into chunks.
- Remove the pips from the cherries and thread the cherries and pineapple alternately on to 8 wooden skewers.
- Place the kebabs on a baking tray and grate the nutmeg and zest of the lime over. Drizzle with maple syrup and squeeze the lime juice over.
- Cook the kebabs under the hot grill for 5 minutes or on a barbecue.
- Decorate with the pomegranate seeds and serve hot or cold with low-fat fromage frais.
Tips
These kebabs can be refrigerated and reheated quickly when needed.
