Ingredients
- 225g pasta shapes
- 1 vegetable stock cube
- 16 cherry tomatoes
- 1 red onion, chopped
- 4 baby courgettes, 80g total
- 1 x 400g can chopped tomatoes
- salt and freshly ground black pepper
- low-calorie oil spray
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Bring a large pan of water to the boil and add the pasta and the stock cube.
- Meanwhile, place the cherry tomatoes in a non-stick roasting tray and lightly spray with oil spray. Roast in the oven for 10 minutes until lightly charred.
- In a non-stick pan, dry-fry the onion until soft, then add the courgettes and continue cooking for 1 minute. Stir in the chopped tomatoes and season with salt and black pepper.
- When the pasta is cooked, drain well and transfer to serving bowls.
- Pour the sauce over the pasta and top with the roasted cherry tomatoes.
Tips
For extra zing, sprinkle some caper berries on top.
