Ingredients
- 1 small can of tomatoes
- 2 tsps tomato puree
- ½ red onion, chopped
- ½ red or green pepper, chopped
- ½ aubergine, chopped
- ½ courgette, sliced
- 1 tsp oregano
- 110g (cooked weight) boiled pasta shapes
- chopped fresh basil
Cooking Instructions
- In a saucepan, mix together 1 small can of tomatoes, 2 tsps tomato puree, ½ chopped red onion, ½ chopped red or green pepper, ½ chopped aubergine, and ½ sliced courgette.
- Sprinkle with 1 tsp oregano and some chopped fresh basil and simmer for 15-20 minutes, adding a little vegetable stock if required.
- When the vegetables are tender, mix in 110g (cooked weight) boiled pasta shapes and heat through.
