Ingredients
- 30g 4% fat ciabatta bread
- 100g mixed wild mushrooms
- 1 tbsp vegetable stock
- 1 tbsp 3% fat Greek-style yogurt
- 2 basil leaves, chopped
Cooking Instructions
- Toast the ciabatta bread.
- Dry-fry the mushrooms for 1 minute. Add the vegetable stock, then remove from heat and mix in the yogurt and basil leaves.
- Spoon on to the bread and serve.
Tips
Add fresh lemon juice to the mushrooms to bring out their full flavour
