Ingredients

  • 30g 4% fat ciabatta bread
  • 100g mixed wild mushrooms
  • 1 tbsp vegetable stock
  • 1 tbsp 3% fat Greek-style yogurt
  • 2 basil leaves, chopped

Cooking Instructions

  1. Toast the ciabatta bread.
  2. Dry-fry the mushrooms for 1 minute. Add the vegetable stock, then remove from heat and mix in the yogurt and basil leaves.
  3. Spoon on to the bread and serve.

Tips

Add fresh lemon juice to the mushrooms to bring out their full flavour
