Mulled red cabbage

Ingredients

  • 500g red cabbage
  • 1 red onion, finely sliced
  • 2 tbsps red wine vinegar
  • 1 tbsp Demerara sugar
  • 1 cinnamon stick
  • 2 star anise
  • fresh nutmeg to grate

Cooking Instructions

  1. Finely shred the cabbage and place in a large saucepan with the remaining ingredients except the nutmeg.
  2. Bring to the boil, then reduce the heat and simmer covered with a lid. Cook for 35-40 minutes until tender. Serve hot or allow to go cold and reheat as required.

Tips

Use this spiced cabbage hot as a vegetable or cold as a salad, its great in Fajitas.
