Ingredients
- 500g red cabbage
- 1 red onion, finely sliced
- 2 tbsps red wine vinegar
- 1 tbsp Demerara sugar
- 1 cinnamon stick
- 2 star anise
- fresh nutmeg to grate
Cooking Instructions
- Finely shred the cabbage and place in a large saucepan with the remaining ingredients except the nutmeg.
- Bring to the boil, then reduce the heat and simmer covered with a lid. Cook for 35-40 minutes until tender. Serve hot or allow to go cold and reheat as required.
Tips
Use this spiced cabbage hot as a vegetable or cold as a salad, its great in Fajitas.
