Jacket potato with sweetcorn coronation

Ingredients
- 2 x 200g Jacket potatoes
- 70g (1 yellow portion pot) canned sweetcorn
- 1 green pepper, deseeded and diced
- 2-3 tbsps extra light mayonnaise
- 10g Rosemary Conley low-fat mature cheese, grated
- a few salad leaves
Cooking Instructions
- Bake 2 x 200g jacket potatoes in a hot oven for 50 minutes until cooked through.
- Split in half and remove the filling into a bowl, reserving the potato skins.
- Add 1 yellow Portion pot (70g) canned sweetcorn to the cooked potato, 1 diced green pepper and 2-3 tbsps extra light mayonnaise.
- Pile the mixture into the potato skins and top with 10g grated Rosemary Conley low-fat Mature Cheese.
- Return to the oven for 10 minutes to heat through and allow the cheese to melt.
- Serve with salad leaves.
