Ingredients
- 2 litres water
- 2 vegetable stock cubes
- 400g peeled and trimmed vegetables (e.g. carrots, parsnips, onion,cabbage) or leftover vegetables
- chopped fresh coriander or other herbs of your choice
- freshly ground black pepper
Cooking Instructions
- Bring the water to the boil in a large pan.
- Add the vegetable stock cubes and vegetables and boil until cooked.
- When the vegetables are cooked, remove from the heat.
- Add the coriander (or other herbs) and black pepper and leave to cool a little.
- Place the soup in small batches in a food processor and blend for a few seconds then transfer to a storage container or jug.
- When all the soup is blended, mix together and allow to cool before storing or freezing.
- Reheat as required. Allow 300ml per serving and accompany with a slice of toasted wholegrain bread.
