Ingredients
- 2 x 250g bundles asparagus
- pinch of coarse black pepper
- 40g Rosemary Conley's Less Than 5% Fat Mature Cheese, or vegetarian alternative, grated
- juice of 1/2 lime
Cooking Instructions
- Blanch the asparagus for 3 minutes in boiling water, then drain.
- Heat a non-stick griddle pan, add the asparagus and cook over a high heat for 5 minutes.
- Just before serving, sprinkle the cheese over the asparagus and drizzle with the lime juice.
