Ingredients
- 2 tortilla wraps
- 2 tbsps Philadelphia Extra Light soft cheese
- 4 fresh mint leaves, chopped
- few rocket leaves
- 2 tomatoes, sliced
- ½ red pepper, deseeded and finely chopped
- thinly sliced cucumber
- freshly ground black pepper
Cooking Instructions
- Preheat a health grill or conventional grill to high.
- Spread the tortillas with the cheese. Sprinkle the mint leaves over and add the rocket leaves, tomatoes, red pepper and cucumber, then season with black pepper. Roll up the tortillas, folding the ends in.
- Place the wraps on the health grill or under the conventional grill for 1-2 minutes. Serve warm.
