Green pea and mint pasta

Ingredients
- 200g pasta shapes
- 1 vegetable stock cube
- 2 garlic cloves, crushed
- 4 baby leeks, finely sliced
- 100g fresh or frozen peas
- 200g low-fat soft cheese
- 1-2 tbsps semi-skimmed milk
- 1 tbsp fresh mint
- fresh basil to garnish
Cooking Instructions
- Cook the pasta in a large saucepan of boiling water with the stock cube.
- Meanwhile, heat a non-stick pan, and dry-fry the garlic and leeks until soft.
- Add the peas to the pan and just enough water to allow them to cook. Bring to a gentle simmer and simmer until the peas are cooked.
- Stir in the cheese and the milk and, just before serving, stir in the mint.
- Drain the pasta thoroughly, arrange on warmed plates and pour the sauce over it. Garnish with the fresh basil and serve with a mixed salad.
Tips
To spice up the sauce, add a pinch of dried chilli flakes.
