Ingredients

  • 200g fresh cranberries
  • 100g caster sugar
  • 100g cooked apple puree
  • 100g soft brown sugar
  • 2 eggs, beaten
  • 150g self-raising flour

Cooking Instructions

  1. Place 200g fresh cranberries with 100g caster sugar in the base of an ovenproof dish.
  2. Mix together 100g cooked apple puree with 100g soft brown sugar, 2 beaten eggs, 150g self-raising flour and pour over the fruit.
  3. Bake in a preheated oven at 150C, 300F, Gas Mark 2 for 20 minutes until well risen.
  4. Either turn out onto a plate and serve hot, or allow to cool in the dish and then slice into fingers and serve as a low-fat cake.

Looks delicious! Would I be able to use my own stewed apple instead of buying? Bought apple sauce often has other ingredients added and I thought I may as well puree the apples myself to make it fresher and healthier! It's also dairy-free which is great because I am always looking for things I can bake for friends who are lactose-intolerant. Can't wait to try it!
