Ingredients
- 200g fresh cranberries
- 100g caster sugar
- 100g cooked apple puree
- 100g soft brown sugar
- 2 eggs, beaten
- 150g self-raising flour
Cooking Instructions
- Place 200g fresh cranberries with 100g caster sugar in the base of an ovenproof dish.
- Mix together 100g cooked apple puree with 100g soft brown sugar, 2 beaten eggs, 150g self-raising flour and pour over the fruit.
- Bake in a preheated oven at 150C, 300F, Gas Mark 2 for 20 minutes until well risen.
- Either turn out onto a plate and serve hot, or allow to cool in the dish and then slice into fingers and serve as a low-fat cake.
