Ingredients
- For the pudding mix
- 100g dark brown sugar
- 100g Light margarine
- 2 eggs
- 25g good quality cocoa powder
- 75g plain flour
- 1 tsp baking powder
- For the topping
- 2 tsp good quality cocoa powder
- 1 tsp instant coffee powder
- 2 tsps dark brown sugar
- 2 tsps boiling water, from kettle
Cooking Instructions
- Preheat the oven to 150C, 300F, Gas Mark 2. Lightly grease a small loaf mould.
- Using an electric whisk, mix together the pudding ingredients in a bowl. Pour the mixture into a loaf mould and bake in the centre of the oven for 30 minutes until firm to the touch.
- Remove the pudding from the oven. Mix together the topping ingredients and pour over the pudding. Return the pudding to the oven for 5 minutes before serving. Serve warm with a little virtually fat-free fromage frais.
