Ingredients

  • 100g plain flour
  • 25g cocoa powder
  • 2 tsps baking powder
  • 120g Light margarine
  • 120g caster sugar
  • 120g mashed banana
  • 2 eggs, beaten
  • grated chocolate, to garnish
  • For the topping
  • 4 tbsps icing sugar
  • 1 tbsp cocoa powder
  • few drops of vanilla essence
  • a little boiling water, from kettle

Cooking Instructions

  1. Preheat the oven to 150C, 300F, Gas Mark 2. Line a 12-bun mould with cake papers.
  2. Sift together the flour, cocoa powder and baking powder into a bowl.
  3. Using an electric whisk, cream together the margarine, caster sugar and banana in a large bowl, then gradually mix in the eggs. Stir in the sifted flour and cocoa powder and spoon the mixture into the cake papers.
  4. Bake the cakes in the centre of the oven for 35 minutes until well risen and golden brown. Test if they are cooked by inserting the blade of a knife into the centre. If the blade comes out clean, the cakes are cooked.
  5. Mix together the topping ingredients, adding a little boiling water to form a smooth mixture. When the cakes are cool, add a blob of topping and top with grated chocolate.
