Ingredients
- 4 egg whites
- 225g caster sugar
- 1 tbsp cocoa powder
- For the topping
- 2 tbsps 3% fat Greek yogurt
- 200g fresh berries
- 10g grated 70% dark chocolate
Cooking Instructions
- Preheat the oven to 150C, 300F, Gas Mark 2. Line a baking tray with parchment paper.
- Using an electric whisk, whisk the egg whites to stiff peaks in a clean bowl.
- Using a metal spoon, fold in the caster sugar a dessertspoon at a time at 10-second intervals, then fold in the cocoa powder.
- Place the mixture in a piping bag and pipe out a large disc on to the lined baking tray. Pipe small swirls along the edge of the disc and 8 seperate whirls for garnishing later.
- Bake the meringue in the oven for 1 hour, then turn off the oven and leave the meringue in the oven until cool.
- When the meringue is cool remove it from the oven, spoon over the low-fat yogurt and cherries. Add the meringue whirls and sprinkle the chocolate on top.
