Chocolate Courgette Cake

This low-fat chocolate courgette cake recipe is moist, fudgy and a great way to sneak some extra veggie goodness into the kids. It's sweet but not overpowering makes good use of courgettes if you've got a glut from the allotment. Chocolate courgette cake

Ingredients

  • 200g courgette
  • 40g Flora Lighter than Light margarine
  • 40g extra light mayonnaise
  • 200g flour
  • 50g Green & Blacks cocoa powder
  • 2 tsps baking powder
  • 3 eggs
  • 100g caster sugar

Cooking Instructions

  1. Preheat the oven to 150C, 300F, Gas Mark 4.
  2. Grate 200g courgette on the course side of a grater.
  3. Add the Flora Lighter than Light, the extra light mayonnaise, flour, Green & Blacks cocoa powder, baking powder, eggs and caster sugar.
  4. Blend again.
  5. Pour the mixture into a 24cm silicon cake mould.
  6. Bake in the centre of a preheated oven for 30-35 minutes until cooked.
  7. Allow to cool and cut into 8 pieces.

Well it sounds like you're well able to adapt your existing knowlege into making things low fat for yourself. They definitely don't taste the same as the high fat versions but just changing a few ingredients such as the flora lighter than light rather than butter makes an enormous difference to the fat content. Good luck with your weight loss

Yes I used bournville, I'm cake maker and decorator in my spare time so like to think I've got half a clue lol, I just don't think it was sweet enough for us and feel maybe the bitter taste came from the bournville. I made some very nice tray bakes instead the week after so we had our cake in the end.

Oh how disappointing...the one we cooked here for this video was really nice. I've checked with Dean and he says did you use young courgettes (as the old ones can taste bitter) and did you use good quality cocoa powder? We can recommend Bournville or Green and Black.

I was really looking forward to trying this recipe but I have to say it was horrid!! We chucked it in the bin, even with the addition of some icing it was still not nice. It had a funny smell that put us off before we even tasted it and the taste wasnt good anyway, really strange !!
