Ingredients
- 200g celery, chopped
- 1 onion, chopped
- 1 garlic clove, crushed
- 300ml vegetable stock
- 1 tbsp plain flour
- 300ml semi-skimmed milk
- 30g Stilton cheese or vegetarian alternative
- 1 tbsp chopped fresh parsley
Cooking Instructions
- Heat a non-stick pan and dry-fry the celery, onion and garlic for 3-4 minutes until soft.
- Add 1 tbsp of the vegetable stock to the pan and sprinkle the flour over. Cook for 1 minute, stirring continuously, before gradually adding the remaining vegetable stock and milk.
- Crumble in the Stilton and allow the soup to simmer and thicken for 20 minutes. Just before serving, sprinkle the parsley over.
