Ingredients

  • 1 white onion, finely sliced
  • 1 green pepper, deseeded and finely sliced
  • 4 celery sticks, finely sliced
  • 2 tbsps dried cranberries
  • 3 tbsps extra light mayonnaise
  • juice of ½ lime
  • salad leaves
  • salt and black pepper

Cooking Instructions

  1. Finely slice 1 white onion, 1 green pepper and 4 celery sticks.
  2. Mix together in a bowl and season with salt and black pepper.
  3. Add 2 tbsps dried cranberries and stir in 3 tbsps extra light mayonnaise, mixed with juice of ½ lime.
  4. Spoon onto salad leaves and serve.
