Ingredients
- 1 white onion, finely sliced
- 1 green pepper, deseeded and finely sliced
- 4 celery sticks, finely sliced
- 2 tbsps dried cranberries
- 3 tbsps extra light mayonnaise
- juice of ½ lime
- salad leaves
- salt and black pepper
Cooking Instructions
- Finely slice 1 white onion, 1 green pepper and 4 celery sticks.
- Mix together in a bowl and season with salt and black pepper.
- Add 2 tbsps dried cranberries and stir in 3 tbsps extra light mayonnaise, mixed with juice of ½ lime.
