Ingredients

  • 2 heads of chicory
  • 1 red onion, finey chopped
  • 150ml chicken or vegetable stock powder
  • 1 tsp chives, chopped

Cooking Instructions

  1. Split 2 heads of chicory in half and place in an ovenproof dish and sprinkle with 1 finely chopped red onion.
  2. Pour 150ml chicken or vegetable stock over the chicory, cover with foil and bake on the bottom shelf of a moderate oven (180C, 350F, Gas Mark 4) for 30 minutes until soft. Transfer to a serving dish and sprinkle with chopped chives.
