Ingredients
- 1kg fresh beetroot
- 2 onions, chopped
- 1 litre vegetable stock
- 2 tbsp sherry
- lime juice
- fresh chives
- swirl of low-fat yogurt
Cooking Instructions
- Wash 1kg fresh beetroot well and place in a saucepan. Cover with water, bring to the boil and cook until tender.
- Drain the beetroot, and run under a cold running tap to remove the skin, as above, then trim off the tops and bottoms and cut the beetroot into small pieces.
- In a preheated non-stick pan, dry-fry 2 chopped onions until soft. Add the chopped beetroot and 1 litre of vegetable stock and simmer for 20 minutes.
- Pour into a liquidiser and blend until smooth, adding 2 tbsps each of sherry and lime juice. Adjust the consistency with a little extra vegetable stock if required.
- Leave to cool, then chill in the refrigerator. Serve cold with a swirl of low-fat yogurt and fresh chives.
