Ingredients
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1 red pepper, deseeded and diced
- 160g (dry weight) brown basmati rice
- 1 tbsp fajita mix powder
- 110g frozen peas
- 1 small red chilli, finely sliced
- 500ml vegetable stock
- 2 tbsps chopped fresh parsley
- Salt and freshly ground black pepper
Cooking Instructions
- Preheat a large non-stick pan, then dry-fry the onion, garlic and red pepper until soft.
- Add the rice, fajita mix powder, peas and chilli, then pour in the stock and cook over a high heat until the rice is cooked and has absorbed all the liquid.
- Just before serving sprinkle with the parsley. Serve with salad.
