Ingredients

  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 red pepper, deseeded and diced
  • 160g (dry weight) brown basmati rice
  • 1 tbsp fajita mix powder
  • 110g frozen peas
  • 1 small red chilli, finely sliced
  • 500ml vegetable stock
  • 2 tbsps chopped fresh parsley
  • Salt and freshly ground black pepper

Cooking Instructions

  1. Preheat a large non-stick pan, then dry-fry the onion, garlic and red pepper until soft.
  2. Add the rice, fajita mix powder, peas and chilli, then pour in the stock and cook over a high heat until the rice is cooked and has absorbed all the liquid.
  3. Just before serving sprinkle with the parsley. Serve with salad.
