Beetroot chocolate brownies

Ingredients

  • 250g cooked beetroot
  • 80g Light margarine
  • 200g Flour
  • 50g Green & Black's cocoa powder
  • 2 tsps baking powder
  • 3 eggs
  • 100g caster sugar

Cooking Instructions

  1. Place 250g cooked beetroot in a food processor and blend until smooth.
  2. Add 80g Flora Lighter than Light, 200g flour, 50g cocoa powder, 2 tsps of baking powder, 3 eggs and 100g caster sugar, and blend again.
  3. Pour the mixture into a 24cm silicone cake mould and bake in the centre of a preheated oven ( 150C, 300F, Gas Mark 2) for 30-35 minutes until cooked.
  4. Allow to cool and cut into 16 pieces.

I made these today and they are delicious, especially hot out of the oven. I had some blueberries that needed using up so added them to the mixture whole and they were gorgeous. Was afraid that if I didn't get the out of the house i would eat them all myself so kept a few pieces back for myself and boxed the rest up for my friends. They loved them even though their initial reaction to beetroot, blueberry and chocolate cake was a little surprised they scoffed the lot and asked for more.

The food processor is brilliant but I broke mine :( I did something really silly with it - I was grating very hard chocolate and I pushed down too hard on it and broke one of the little stalks the whisk slots into! So anyone who has it - don't grate hard chocolate or press really hard! :| Wow never made a cartouche like that before - fab way of doing it! Looks really yummy! I love choc brownies so going to have to give it a go :D
