Ingredients

  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 celery sticks, sliced
  • 100g potatoes, finely diced
  • 250g asparagus, finely chopped
  • 2 tsps chopped fresh thyme
  • 2 bay leaves
  • 1 litre vegetable stock
  • mint leaves, to garnish

Cooking Instructions

  1. Place all the ingredients except the mint leaves in a large saucepan and simmer for 20 minutes until the vegetables are tender.
  2. Serve hot, garnished with the mint leaves.

Tips

For a smooth soup, whizz the cooked soup in a blender for 1-2 minutes.
