Ingredients
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 2 celery sticks, sliced
- 100g potatoes, finely diced
- 250g asparagus, finely chopped
- 2 tsps chopped fresh thyme
- 2 bay leaves
- 1 litre vegetable stock
- mint leaves, to garnish
Cooking Instructions
- Place all the ingredients except the mint leaves in a large saucepan and simmer for 20 minutes until the vegetables are tender.
- Serve hot, garnished with the mint leaves.
