Asparagus guacamole (V) (G)

Ingredients

  • 200g asparagus
  • 1 clove garlic, peeled
  • 2 tbsps extra light mayonnaise
  • salt and black pepper
  • 1 large tomato

Cooking Instructions

  1. 1 Cook the asparagus in a shallow pan of water with the peeled garlic clove for 2 minutes until tender. Drain, retaining some of the water.
  2. 2 Place the asparagus and garlic into a blender and add the mayonnaise and 1-2 tbsps of the reserved liquid. Blend until smooth and lump-free. Scrape into a bowl and season with salt and black pepper.
  3. 3 Skin the tomato by dropping in boiling water for 10 seconds then into cold water. Peel away the skin and cut in half. Scoop out the seeds and discard. Rinse the flesh before chopping and adding to the mixture.
  4. 4 Spoon into a serving dish and serve with baked tortilla wedges or chopped cucumber.
