This low fat Rosemary Conley sponge recipe is a proper pudding with a healthy twist. The apple pieces stay just crunchy enough to give them some bite after cooking while the surrounding sponge is light and fluffy. Sprinkle with sugar and smother it in custard. 111 calories and 4.9% fat.

  • 75g low-fat spread
  • 100g caster sugar
  • 3 eggs, beaten
  • 100g plain flour
  • 1 tsp baking powder
  • 200g eating apples, diced
  • 1 tsp vanilla essence
  • 1 tbsp demerara sugar

Cooking Instructions

  1. Beat the low-fat spread with the caster sugar, gradually adding the egg.
  2. Sieve in the flour and baking powder and beat again adding the vanilla and diced apple. Pour into a small cake tin or mould and bake in a preheated oven for 35 minutes until firm to touch.
  3. When the pudding is cooked – remove from the oven and sprinkle with sugar. Serve warm with low-fat custard.


Serve cold as a low-fat cake

If I was making this I would set the oven for about 160-180 C or Gas 3-4 - it may need a bit longer in a lower temperature!
