Tiramisu - Gluten Free

This gluten free tiramisu recipe uses gluten free flour in the chocolate sponge making it a great tasting low fat dessert for everyone. Gluten-free diets are followed by people with coeliac disease and often by those that are wheat intolerant. Using Greek yoghurt instead of cream keeps the calories low at just 202 and only 3% fat.

Sponge Tiramisu pudding

Ingredients

  • 50g caster sugar
  • 40g light margarine
  • 2 eggs
  • 1 tbsp semi-skimmed milk
  • 50g gluten free self raising flour
  • 10g cocoa powder
  • For the topping
  • 200ml freshly brewed strong coffee
  • 300ml Greek low-fat yogurt

Cooking Instructions

  1. Mix together the sponge ingredients using an electric whisk. Spoon into a lightly greased swiss roll tray and bake in a preheated oven 150C, 300F, Gas Mark 4 for 20 minutes.
  2. Remove from the oven and allow to cool. When cool, remove the sponge from the tin and cut out 2 small squares. Cut these in half to make 4 sponge triangles. Crumble the remaining sponge.
  3. Place half the crumbled sponge into the base of each glass and top with 100ml coffee. Allow to soak in, then top with half the yogurt. Repeat with another layer of sponge, drizzled with the remaining coffee and finsh by topping with the remaining yogurt.
  4. Place the reserved sponge triangles on the top and dust with cocoa powder. Chill and serve.

Tips

Add a splash of brandy for a more alcoholic treat.
