Ingredients
- 400g Rhubarb, chopped into small pieces
- 400g Strawberries, cut into quarters
- 3 tbsps caster sugar
- 100g plain flour
- 100g low-fat muesli
- 30g Demerara sugar
- 50g Flora Lighter than Light Margarine
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Place the chopped rhubarb and chopped strawberries into an ovenproof dish and scatter with the caster sugar.
- In a bowl, mix together the plain flour, low-fat muesli and demerara sugar, then rub in the Flora Lighter than Light margarine.
- Pile the crumble on top of the fruit and bake in the oven for 20-25 minutes until the crumble is golden brown on top and the rhubarb is soft.
- Serve hot with low-fat custard or virtually fat free fromage frais.
Tips
Demerara sugar adds crunch to this low-fat fruity pudding.
