Strawberry & rhubarb muesli crumble

Ingredients

  • 400g Rhubarb, chopped into small pieces
  • 400g Strawberries, cut into quarters
  • 3 tbsps caster sugar
  • 100g plain flour
  • 100g low-fat muesli
  • 30g Demerara sugar
  • 50g Flora Lighter than Light Margarine

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Place the chopped rhubarb and chopped strawberries into an ovenproof dish and scatter with the caster sugar.
  3. In a bowl, mix together the plain flour, low-fat muesli and demerara sugar, then rub in the Flora Lighter than Light margarine.
  4. Pile the crumble on top of the fruit and bake in the oven for 20-25 minutes until the crumble is golden brown on top and the rhubarb is soft.
  5. Serve hot with low-fat custard or virtually fat free fromage frais.

Tips

Demerara sugar adds crunch to this low-fat fruity pudding.
