Strawberry souffle

Ingredients
- 200ml semi-skimmed milk
- 1 tbsp of cornflour
- 150g chopped strawberries
- 2 egg whites
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6. Heat 200ml semi-skimmed milk to near boiling, then whisk in 1 tbsp of cornflour mixed with 2 tbsps milk. Simmer to allow to thicken and then remove from the heat
- stir in 150g chopped strawberries
- Whisk 2 egg whites until stiff, then fold into the mixture and pour into individual ramekin dishes
- Bake in a preheated oven for 15 minutes until brown. Serve immediately as they will collapse as soon as they leave the oven
Tips
Make the base in advance leaving just the egg white to fold in and cook for 15 minutes
