A low fat version of a true English dessert. Orange zest and cinnamon add a zingy twist to this low calorie pud.

Rhubarb and orange crumble

Ingredients

  • 400g rhubarb, chopped into small pieces
  • 3 tbsp caster sugar
  • zest of 1 orange
  • 100g flour
  • 30g demerara sugar
  • 50g light margarine
  • 1 tsp ground cinnamon

Cooking Instructions

  1. Chop 400g rhubarb into small pieces into the bottom of an ovenproof dish.
  2. Scatter with 3 tbsps caster sugar and grate over the zest of one orange.
  3. Mix 100g flour with 30g demerara sugar together.
  4. Rub in 50g light margarine and pile on top and sprinkle with 1 tsp ground cinnamon.
  5. Bake in the oven for 20-25 minutes until golden brown on top and the rhubarb soft.
  6. Serve hot with low-fat custard or virtually fat-free fromage frais.

Tips

Using demerara sugar adds a great crunch to this warming pudding.
