Rhubarb and orange crumble

Ingredients
- 400g rhubarb, chopped into small pieces
- 3 tbsp caster sugar
- zest of 1 orange
- 100g flour
- 30g demerara sugar
- 50g light margarine
- 1 tsp ground cinnamon
Cooking Instructions
- Chop 400g rhubarb into small pieces into the bottom of an ovenproof dish.
- Scatter with 3 tbsps caster sugar and grate over the zest of one orange.
- Mix 100g flour with 30g demerara sugar together.
- Rub in 50g light margarine and pile on top and sprinkle with 1 tsp ground cinnamon.
- Bake in the oven for 20-25 minutes until golden brown on top and the rhubarb soft.
- Serve hot with low-fat custard or virtually fat-free fromage frais.
Tips
Using demerara sugar adds a great crunch to this warming pudding.
