Ingredients
- 200g stoned prunes
- 100ml strong earl grey tea
- 175g plain flour
- 150g soft brown sugar
- 150g cooked and mashed parsnips
- 3 eggs
- 1 tsp almond essence
- 3 tsps baking powder
- Icing sugar for dusting
Cooking Instructions
- Preheat the oven to 150C, 300F, Gas Mark 4.
- Soak 200g stoned prunes in 100ml strong earl grey tea overnight.
- Place in a food processor and blend until smooth.
- Scrape into a bowl.
- Add 175g plain flour, 150g soft brown sugar, 150g cooked and mashed parsnips, 3 eggs beaten, 1 tsp almond essence and 3 tsps baking powder.
- Mix well then pour into a small loaf tin and bake in a preheated oven for 35-40 minutes until well risen.
- Dust with icing sugar and serve warm.
