Ingredients
- 3 sheets filo pastry
- 250g no-soak prunes
- low-calorie oil spray
- icing sugar, for dusting
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Divide the sheets of pastry. Place 1 sheet on a non-stick baking tray, lightly spray with oil and place another sheet on top. Spray again and fold the pastry into a long strip. Spread the prunes over the strip.
- Scrunch up the remaining pastry sheet, place on top and spray lightly with oil.
- Bake in the oven for 15-20 minutes until golden brown. Remove from the oven and dust with icing sugar.
- Serve hot with low-fat custard or low-fat vanilla yogurt.
Tips
For a luxury flavour, soak the prunes overnight in 2 tbsps of brandy.
