Ingredients

  • 3 sheets filo pastry
  • 250g no-soak prunes
  • low-calorie oil spray
  • icing sugar, for dusting

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Divide the sheets of pastry. Place 1 sheet on a non-stick baking tray, lightly spray with oil and place another sheet on top. Spray again and fold the pastry into a long strip. Spread the prunes over the strip.
  3. Scrunch up the remaining pastry sheet, place on top and spray lightly with oil.
  4. Bake in the oven for 15-20 minutes until golden brown. Remove from the oven and dust with icing sugar.
  5. Serve hot with low-fat custard or low-fat vanilla yogurt.

Tips

For a luxury flavour, soak the prunes overnight in 2 tbsps of brandy.
