Ingredients

  • 2 eggs
  • 100g caster sugar
  • 180g plain flour
  • 1 tsp baking powder
  • pomegranate juice
  • Serve with low-fat yogurt or fromage frais

Cooking Instructions

  1. Whisk together the eggs and the caster sugar until thick and creamy.
  2. Mix the plain flour with 1 tsp of baking powder, stir in 2 tbsps of the mixture into the eggs and sugar, add a little pomegranate juice and repeat until all the ingredients have been used up.
  3. Pour into lightly greased ramekins and cook in a preheated oven at 150C, 300F, Gas Mark 2 for 20 minutes until firm to the touch.
  4. Serve warm with low-fat yogurt or fromage frais.
