Poached pears in lemongrass syrup

Ingredients

  • 4 dessert pears
  • juice of 1 lemon
  • 300ml white wine
  • 1 tsp freshly chopped lemongrass
  • 1 tbsp soft brown sugar
  • 2cm finely chopped ginger
  • 100g blueberries

Cooking Instructions

  1. Peel the dessert pears and roll in a little lemon juice to prevent them from turning brown.
  2. Place in a small saucepan with the white wine, lemon grass, soft brown sugar and ginger. Simmer gently for 10 minutes until soft then add the blueberries and mix well.
  3. Serve warm with low fat fromage frais.
