Plum and pear bruschetta

Ingredients

  • 2 ripe plums
  • 2 ripe pears
  • juice of 1 orange
  • 1 tbsp caster sugar
  • pinch of cinnamon (optional)
  • 1 tsp vanilla extract
  • 4 slices brown bread
  • 1 tbsp maple syrup
  • 1 tbsp 2% fat Greek yogurt
  • 4 fresh mint leaves, to garnish

Cooking Instructions

  1. Cut the fruit into quarters and remove the centre cores and stones. Place in a small saucepan with the orange juice, caster sugar, cinnamon (if using) and vanilla extract and poach gently over a low heat until the fruit is soft.
  2. Heat a non-stick frying pan, add the maple syrup and then the bread slices and cook each slice lightly on both sides until slightly toasted.
  3. Arrange a slice of bread on each plate, top with the fruit, a dollop of yogurt and garnish with mint.

Tips

For a wheat-free dessert, serve the poached fruits on a bed of creamy low-fat rice pudding.
