Plum Tatin

Ingredients

  • 6 dark plums
  • 2 tbsps caster sugar
  • 4 sheets filo pastry
  • low-calorie oil spray

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6. Preheat a non-stick frying pan.
  2. Remove the stones from the plums, place the stoned plums in the hot pan, add the sugar and cook over a low heat until the sugar starts to colour. Remove the plums from the pan and place in the base of a silicone cake mould.
  3. Add 2 tbsps of water to the pan (be careful of the steam as the water comes into contact with the hot sugar). Heat until the sugar is dissolved, then pour over the plums.
  4. Layer the filo pastry sheets on top, spraying in between the layers with a little spray oil.
  5. Bake in the oven for 15-20 minutes until golden in colour, then remove from the oven and allow to cool slightly before turning out onto a serving plate. Serve hot ot cold with low-fat yogurt.
