Peach and blueberry cobbler

Ingredients

  • 4 peaches, stoned and halved
  • 150g fresh blueberries
  • 2 tbsps sugar
  • 100g self-raising flour
  • 2 eggs, beaten
  • 150ml semi-skimmed milk
  • sugar for sprinkling

Cooking Instructions

  1. Place the fruit in a non-stick frying pan and sprinkle with the sugar.
  2. Whisk the flour, eggs and milk in a bowl until smooth.
  3. Pour the batter over the fruit, cover the pan with a lid and cook gently over a low heat for 20 minutes until the batter is cooked.
  4. Serve warm with 2% fat Greek yogurt.
