Ingredients
- 4 peaches, stoned and halved
- 150g fresh blueberries
- 2 tbsps sugar
- 100g self-raising flour
- 2 eggs, beaten
- 150ml semi-skimmed milk
- sugar for sprinkling
Cooking Instructions
- Place the fruit in a non-stick frying pan and sprinkle with the sugar.
- Whisk the flour, eggs and milk in a bowl until smooth.
- Pour the batter over the fruit, cover the pan with a lid and cook gently over a low heat for 20 minutes until the batter is cooked.
- Serve warm with 2% fat Greek yogurt.
